Sweet Corn & Zucchini Fritters with Spicy Honey Drizzle
Serves: 4 (makes 8–10 fritters)

🛒 Ingredients:
For the fritters:
1 cup fresh corn kernels (about 2 ears)
1 medium zucchini, grated and squeezed dry
1/4 small red onion, finely diced
1/3 cup all-purpose flour
1/4 cup grated Parmesan (or feta for a twist)
1 large egg
1 garlic clove, minced
1/4 tsp smoked paprika
1/4 tsp salt
Black pepper, to taste
2 tbsp chopped chives or scallions
Olive oil for frying
For the spicy honey:
3 tbsp honey
1/2 tsp red pepper flakes (or to taste)
Squeeze of lemon juice (optional)

Prep the veggies:
Grate the zucchini and place it in a clean towel or paper towel. Squeeze out as much liquid as possible. Combine with corn and red onion in a large bowl.Mix the batter:
Add flour, cheese, egg, garlic, paprika, salt, pepper, and chives. Stir until well combined. If the mixture seems too loose, add another tablespoon of flour.Cook the fritters:
Heat a thin layer of olive oil in a skillet over medium heat. Drop heaping spoonfuls of the mixture into the pan and flatten slightly. Cook for about 3–4 minutes per side until golden and crispy. Transfer to a paper towel-lined plate.Make the spicy honey:
In a small bowl, stir together the honey and red pepper flakes. Microwave for 10–15 seconds to thin it slightly and enhance the heat. Add lemon juice if using.Serve:
Drizzle the hot fritters with spicy honey and garnish with extra herbs or a dollop of Greek yogurt or sour cream.
