Sweet Corn & Zucchini Fritters with Spicy Honey Drizzle

🛒 Ingredients:

For the fritters:

  • 1 cup fresh corn kernels (about 2 ears)

  • 1 medium zucchini, grated and squeezed dry

  • 1/4 small red onion, finely diced

  • 1/3 cup all-purpose flour

  • 1/4 cup grated Parmesan (or feta for a twist)

  • 1 large egg

  • 1 garlic clove, minced

  • 1/4 tsp smoked paprika

  • 1/4 tsp salt

  • Black pepper, to taste

  • 2 tbsp chopped chives or scallions

  • Olive oil for frying

For the spicy honey:

  • 3 tbsp honey

  • 1/2 tsp red pepper flakes (or to taste)

  • Squeeze of lemon juice (optional)


🔪 Instructions:

  1. Prep the veggies:
    Grate the zucchini and place it in a clean towel or paper towel. Squeeze out as much liquid as possible. Combine with corn and red onion in a large bowl.

  2. Mix the batter:
    Add flour, cheese, egg, garlic, paprika, salt, pepper, and chives. Stir until well combined. If the mixture seems too loose, add another tablespoon of flour.

  3. Cook the fritters:
    Heat a thin layer of olive oil in a skillet over medium heat. Drop heaping spoonfuls of the mixture into the pan and flatten slightly. Cook for about 3–4 minutes per side until golden and crispy. Transfer to a paper towel-lined plate.

  4. Make the spicy honey:
    In a small bowl, stir together the honey and red pepper flakes. Microwave for 10–15 seconds to thin it slightly and enhance the heat. Add lemon juice if using.

  5. Serve:
    Drizzle the hot fritters with spicy honey and garnish with extra herbs or a dollop of Greek yogurt or sour cream.
